Overnight oats that taste like Cobbler for breakfast? Yessssss.
If you’re ask sweets vs savory; which are you? I’m a savory person, but sweets call my name more and more as the fall and winter weather sets in. And a healthy dessert option is a huge win in my books. Especially one that’s shown to have ingredients in clinical studies to have weight loss benefits, support healthy cholesterol levels, support healthy blood sugar levels, reduce junk food cravings, and is a nutrient dense dessert!
This recipe is one I couldn’t stop eating this past fall and winter. I used the Vanilla Chai Shakeology so when the seasonal flavor ran out I was so sad. I hoped, prayed, and begged for it to come back!
Then this summer when they announced it would be back I was so flipping excited to add this recipe back into my life! Plus, it’s not back as a seasonal flavor, but a full time flavor! It will be renamed Snickerdoodle Shakeology, but it’s the same recipe. It will be releasing this October.
I am so ready to have my dessert for breakfast year-round while having all the benefits! Hitting that dessert craving first thing in the morning and doing something good for me? Yes, please!
Grew up on property with a huge garden and all kinds of fruit trees. I was used to my mom making desserts with our fresh fruit and canning what was left. Having an apple pie was such a treat and now I get to recreate that memory for breakfast?! Okay! Comfort food and nostalgic bliss unlocked every morning for the win.
The best part about this dessert that’s doing amazing things for your body is you can make it ahead of time! Well, the second best… or third. Because I guess I would put the health effects and the deliciousness factor up there pretty high too. Probably before the ease of making it ahead? I don’t know though. As a mom on the go- this is a huge benefit!
So, the original recipe had apples, but I tried all kinda of fruit and it was all amazing. I also subbed pumpkin pie spice for apple pie spice because I first had it in the fall and it’s what I had (is there even a difference? Serious answers not needed… ha). Also, I used real maple syrup because it’s what I had the first time I made it, but I started to realize I didn’t even need the added sweetener and I left it out on many future recipes. Up to you and your personal flavoring choice.
Another recommendation I have is to leave the Shakeology scoop out until it’s go time. I pre-made the oats with everything but the Shakeology scoop and I would add it in and mix together in the jar just before eating and it was perfection. I would make 3-4 days worth at a time so I could grab and go for days.
After I tried the original apple recipe for awhile. I ran out of apples one day but had a peach and I gave it a go. I loved it even more. PEACH COBBLER DUPE! That opened my mind to try so many more flavors. I loved the peach, then moved on to mixed frozen berries from the bag I had from Costco, pumpkin puree, raspberries, blueberries, and a blueberry + lemon combo. They were all incredible and I couldn’t believe this breakfast was so filling and so healthy!
Of course the images are for the effect of what I dreamed I was eating while escaping with this dessert for breakfast every day. It felt like I was sitting down with a dream dessert every morning!
Oh! I didn’t try this, but what about strawberries with some cocoa powder added in?! I will have to try this October when I get my new bag.
Now that I practice Intermittent Fasting I’m realizing I just absolutely love how easy it is to take this and eat on the go when the eating window opens. Starting the window with fiber-filled complex carbs and protein is awesome!
Plus, did you know the average weight gain in America from Halloween to New Year is 7-15lbs?! I often tell the people I work with that I can really understand if this isn’t your “weight loss” season, but what if it wasn’t our “weight gain” season, either? What if we hit January 1st without a winter coat to shed and we are feeling fab? Getting daily dense nutrition in the form of a comfort treat is a win!
Okay, I will share my recipe with the changes I made. I can’t wait for you to try this! And when you do; let me know if you tried a new combo of fruit that I need to give a go! What you need:
- Nonstick cooking spray
- 1c any fruit… chopped if not berries or puree
- ½ tsp sweetener of choice (optional) .. I used maple syrup if I used any
- ½ tsp. apple pie spice or pumpkin pie spice… any pie spice
- ¼ cup dry rolled oats
- 1 scoop Snickerdoodle Plant-Based Vegan Shakeology
- ½ cup unsweetened almond milk
What You Do:
- Heat a medium nonstick skillet over medium-high heat; lightly coat with spray.
- Add fruit, sweetener if using, and pie spice; cook, stirring frequently, until softened.
- Add oats, fruit, and almond milk to a sealable 16 oz. jar; stir to combine. Refrigerate for at least 4 hours or overnight.
- Add 1 scoop Snickerdoodle Shakeology and mix again when ready to enjoy.
